Ingredients:

Base:

220g plain flour

110g room temp butter

110g brown sugar

1 ½ tsp ground ginger

¼ tsp grated nutmeg

¼ tsp bicarb

sea salt

Topping:

80g butter

1/3 cup golden syrup

1 ½ cups icing sugar

1 tbsp ground ginger

Ginger Slice

The base of this slice is a version of Grasmere gingerbread, which is only found in Cumbria, and the topping is from a New Zealand ginger slice. Just the thing to go with a cuppa!

  1. Preheat oven to 180 degrees C

  2. Grease and line a 20cm square tin

  3. Mix all the base ingredients together in a food processor (will be sand-like). Press into the tin.

  4. Bake for about 20 mins till golden brown.

  5. While the base is cooking, melt all the topping ingredients in a small pan on a low heat.

  6. Stir for about 3 minutes, till the butter is melted.

  7. Pour over the base while the base is still hot.

  8. Leave to cool, then cut into squares.
