Ginger Chewy Cookies
I always intend to share these, but somehow end up eating most of them. Very moreish!
makes 10
Ingredients:
½ cup soft butter
¾ cup brown sugar
½ tbsp vanilla essence
1 ½ cups plain flour
½ tbsp baking powder
¼ tsp salt
80g naked ginger, chopped
½ tbsp ground ginger
½ tbsp ground cinnamon
¼ tsp mixed spice
½ cup granulated sugar or golden demerara
¼ cup black treacle
1. Preheat oven to 175 degrees C. - (fan-forced)
2. Line 2 large trays with baking paper.
3. Cream butter and brown sugar together.
4. Mix in treacle, vanilla and spices
5. Add flour and baking powder and mix till combined.
6. Add ginger pieces.
7. Roll into balls, then roll in the white or golden sugar. Place 6 on each tray well spread out. Press gently to flatten slightly.
8. Cook for 12 minutes. Don’t overbake them – they should still be soft when you take them out of the oven. They will firm up on cooling.
