Cream of Mushroom Soup

Serves 4

Ingredients:

500g mixed mushrooms, chopped

1 x red onion, chopped

3 x garlic cloves, grated

150ml thickened cream

750ml vegetable stock

salt & pepper

3 tbsp olive oil

tbsp chopped chives to serve

  1. Gently fry the onion in the olive oil till soft. Add the mushrooms and garlic. Cook till softened.

  2. Add the stock, salt & pepper.

  3. Spoon into the blender and whizz till smooth.

  4. Pour back into the saucepan and add the cream. Stir and heat through.

  5. Serve with a swirl of cream and some chopped chives.
