Cream of Mushroom Soup
Serves 4

Ingredients:
500g mixed mushrooms, chopped
1 x red onion, chopped
3 x garlic cloves, grated
150ml thickened cream
750ml vegetable stock
salt & pepper
3 tbsp olive oil
tbsp chopped chives to serve
Gently fry the onion in the olive oil till soft. Add the mushrooms and garlic. Cook till softened.
Add the stock, salt & pepper.
Spoon into the blender and whizz till smooth.
Pour back into the saucepan and add the cream. Stir and heat through.
Serve with a swirl of cream and some chopped chives.
